Breakfast Muffins

Forget Starbucks with their calorific coffee and their "pretending to be good for you" muffins. These muffins are super satisfying and contain a whole load of good stuff to start your day with. They're really easy and quick to make too.


This recipe makes 6 muffins (one to taste test, and one for each morning before work, ideal!)

Ingredients


150g wholemeal flour
25g rolled porridge oats (and a few extra, to make the muffins look pretty)
25g light brown sugar
50g raisins/sultanas
50g chopped, dried apricots
25g chopped walnuts
1.5 tsps baking powder
Half a tsp mixed spice
Half a tsp cinnamon


50ml groundnut oil
75ml natural yoghurt
75ml skimmed milk
1 egg, beaten (you only want to use about half of this mixture, I recommend using the other half to make a very tiny omelette)
1 small, mashed banana
Half a tsp vanilla extract
1 small apple, grated
1 small carrot, grated
  • Preheat the oven to 190 C
  • Mix up the dry ingredients (top of the list) in one bowl, and mix up the wet ingredients (bottom of the list) in another bowl.
  • Pour the wet mix into the dry mix and stir together until it's just about combined.
  • Scoop the mix into muffin cases and top with a few extra oats for decoration
  • Bake in a muffin tray for 20 minutes.
