Courgette Spaghetti with Cashew and Dill Dressing

This is a refreshing and super healthy alternative to a "ranch" style dressing. Lovely served on a bed of curly courgette! Serves 2.

You will need:
1 large courgette
1 cup water
1/4 cup apple cider vinegar
1 and a half cups cashews, soaked in water for around 3 to 4 hours
Juice of half a lemon
1 clove garlic
1 tsp garlic powder (you can never have too much garlic!)
2 good tsp of onion powder
1 tsp salt
1 good tsp manuka honey
A small handful fresh dill
A small handful fresh basil

Courgette spaghetti is made by putting the courgette through a spiraliser, if you don't have one you could make thin strands with a mandolin cutter or just very, very carefully with a sharp knife. In all honesty though, a spiraliser is by far the coolest and most fun kitchen gadget you can own.

Blend all the other ingredients together except for the basil. If you are making it in advance add a little extra water as it does thicken up a bit.

Add the dressing to the spaghetti and decorate with the basil. Easy!
